An HTST Pasteurizer Operator is a person responsible for the legal pasteurization of milk or dairy products using "high temperature short time" (HTST) pasteurization equipment. This includes HHST and UHT pasteurization equipment. Pasteurization of milk and dairy products must be conducted under the direct supervision of a pasteurizer operator licensed for the type of equipment in use (HTST or Vat).
